Meet the incredible team behind Paradox Coffee Roasters

Pablo, our NSW Training Manager, brings extensive experience in specialty coffee, coupled with a refined palate and a nurturing approach. His genuine and caring style makes him the ideal candidate to lead our café supply partners through every stage of their coffee journey.

Where are you from?

Armenia, Colombia

How did you get started in the coffee industry?

I came to Sydney from Brisbane for Christmas holidays to visit family. My sister was working at a café that also roasted their own coffee onsite. She jokingly asked if I wanted to work there. Not having anything grounding me in Sydney, I said yes. I started toasting sandwiches and running coffees out. A few weeks in, they began my training on the machine, like everyone else. I took to it like a fire to a dry haystack. Weeks later, I was the main barista and soon became a sponge for coffee knowledge. I couldn't get enough; working full-time and visiting cafés, and talking to baristas on my days off was amazing.

What do you love about coffee?

I love that coffee plays an integral role in all parts of all societies and cultures. Coffee is always there indiscriminately giving all people fuel and enjoyment.

Favourite coffee right now?

PNG Kabiufa—the most underrated country for coffee—is more well-known for producing commercial coffee. This region produces incredible and fruity coffees.

Fun fact about yourself?

Growing up in Armenia, Colombia, I have a fond memory of big ute-like trucks transporting big bags stacked on top of each other. I learned years later, as an adult barista, that Armenia is the coffee centre for coffee in Colombia, and those trucks were transporting coffee.
