Let’s Slow Things Down

Are you a fan of hot filter coffee and on those warm summer days ever wanted to enjoy your favourite brew in a cold fashion? Perhaps you’ve seen the craze of ‘cold brew’? You may have heard it’s a smooth brew with less acidity and bitterness… and you would be right!

During the cold brew process, time replaces heat, resulting in a much longer brew time and gentle extraction to achieve the perfect flavour. Whether it’s the science or romance of brewing coffee that appeals to you most, or perhaps you simply just enjoy indulging in your favourite beverage, cold brew can tick all the boxes!

What Is Cold Brew?

Cold Brew Coffee utilises time rather than heat to extract pivotal oils and flavours from the coffee. This is a full immersion method, brewed for an extended time frame, anywhere between 12 – 24 hours.

Recommendation: Use a Single Origin coffee for black coffee brews to let the specific flavour profile shine. A light roast or filter coffee roast produces the best results for cold brew or try our brand new Lychee Bloom Cold Brew Coffee!

Why Cold Brew?

Cold brew is popular because of its smooth, mellow flavour and versatility. It’s gentle on the stomach, naturally sweet, and can be enjoyed on its own, over ice, or with milk for iced lattes and other beverages.

Cold brew is convenient to prepare in advance and can be stored in the fridge for several days. It also highlights subtle specialty coffee flavours and allows flexibility with coffee-to-water ratios to achieve the desired taste.

Tools & Equipment

Grinder: Grinding fresh ensures optimal flavours. Oxidisation occurs once coffee is ground, causing loss of aroma.

Scales: Help maintain correct coffee-to-water ratio and precision.

Paddle or Spoon: Used to agitate the coffee for complete saturation and even extraction.

Filtered Water: Essential for clean, consistent flavour.

Brewing Systems: Hario Cold Brew Pot, Toddy Domestic Cold Brew Coffee Maker

Storage Container: Jar or pitcher for steeping.

Filters: Paper, cloth, or reusable nylon. Rinse paper filters first to remove odours.

Ice & Milk: Optional for serving.

Variables

Water Temperature: Cold filtered water is preferable. Ambient or cool water is sufficient.

Grind Size: Medium-coarse works best; too fine can cause bitterness.

Roast Profile: Light roasts work best with slower extraction methods.

Coffee: Water Ratio: Typically 1:5 – 1:15 depending on brewing system.

Agitation: Stir at the start to ensure even saturation; too much can negatively affect flavour.

Brewing Tips

Ratio: 1:5 – 1:15

Roast: Lighter roast for longer brews.

Filters: Always wet paper filters first.

Agitation: Stir at the start of the Cold Brew process.

Chilled: Brew doesn’t need to be in the fridge, but refrigerate after brewing.

Grind Size: Medium-coarse produces the best flavours.

Let's Brew

Brew your Cold Brew carefully. Under-extracted coffee tastes sour and lacks sweetness while over-extracted coffee becomes bitter. If using a concentrate, add water or milk gradually to adjust the flavour. Taste as you go until it is balanced then enjoy your perfectly smooth Cold Brew.

General Cold Brew Brewing

Start by measuring your coffee and water according to your chosen ratio. If using whole beans, grind them coarsely. Combine the coffee and water in your brewing vessel, stirring to ensure all the grounds are fully saturated. Cover and let the mixture steep in the fridge or at room temperature for 12–18 hours. Once brewed, filter through a fine mesh sieve or cold brew filter. Serve over ice, and dilute with water or milk if desired.

Hario Cold Brew Pot Guide

Begin by adding coarsely ground coffee to the Hario filter. Fill the filter with cold, filtered water and stir gently to ensure all the grounds are saturated. Cover and let the coffee steep in the fridge for 12 to 18 hours. Once brewed, press the plunger, remove the filter, and serve over ice or with milk.

Tip: This method produces a clean, smooth cup. Adjust the steeping time to achieve a stronger or lighter flavour.

Toddy Cold Brew System Guide

Start by adding coarsely ground coffee to the Toddy brewing chamber. Pour in filtered water and stir gently to ensure all the grounds are evenly saturated. Allow the coffee to steep at room temperature or in the fridge for 12 to 18 hours. After brewing, carefully remove the coffee bed and filter. Transfer the brewed coffee to a storage container. Serve over ice or dilute with water or milk to taste.

Tip: This method is perfect for making larger batches. Keep the coffee refrigerated for up to seven days.

  • What is Infused Coffee

Infused coffee is a processing technique where fruits, spices, or specially selected yeasts are introduced during fermentation. This enhances or transforms the coffee’s natural flavours, producing notes like tropical fruit, florals, or subtle spices.

  • Why Infuse Coffee

Infusion allows farmers to diversify flavour profiles and craft unique, high-quality coffees. It adds value, meets global demand for innovative profiles, and gives producers more control over the final cup flavour.
