LIMITED RELEASE

ETHIOPIA YIRGACHEFFE HYDRO HONEY

Produced at Danche Washing Station in Chelbesa, Gedeb, this Hydro Honey lot is sourced from 915 smallholder farmers across Ethiopia’s Yirgacheffe region. High-sugar coffee cherries (Brix >20) are selected at peak ripeness, then sorted and floated to remove defects. After 48 hours of shaded pre-drying, they are transferred into fermentation tanks, smoked with olive tree trunks and quenched with water to initiate controlled fermentation. The fermentation continues for 48 hours across anaerobic and aerobic stages before the coffee is returned to shaded raised beds for approximately 25 days of drying. The result is a vibrant, fruit-forward cup with notes of rosehip, apricot, plum and grapefruit, and a smooth, creamy texture.

PERU LAS ETÍOPES GEISHA

Los Etíopes Geisha is a 100% Geisha from Las Etíopes, a farm project led by Merlith Cruz in the high-altitude region of El Porvenir, Jaén (Cajamarca), Peru. Grown in cool mountain conditions, it reflects the elegance of Peru’s high-altitude terroir, enhanced by careful cultivation and refined processing. Coffee cherries are hand-harvested, rigorously sorted, and undergo extended fermentation and a fully washed process, followed by slow drying on raised beds to preserve clarity and sweetness. The cup is clean and expressive, with a delicate jasmine and honeysuckle floral profile, bright orange citrus in the hot cup, and a soft apricot sweetness as it cools.

INDONESIA FINCA DE BERMAN

Finca de Berman is a highly regarded specialty coffee farm in Pangalengan, within the volcanic highlands of West Java, Indonesia. The region’s volcanic soil, high elevation and unique microclimate create ideal conditions for producing exceptional quality Arabica coffee. Reflecting the terroir of the Gunung Tilu region, this coffee displays bright acidity, sweetness and complexity, while innovative anaerobic processing enhances its vibrant tropical fruit character and aromatics. The cup reveals notes of pineapple and ripe fig, layered with rich chocolate sweetness and a lingering finish. Recognised by the Indonesia Cup of Excellence, Finca de Berman is renowned for coffees of outstanding balance, clarity and expression.
