Barista of the Month - Pim, Paradox Cafe - May 2026

Meet Pim from Paradox Coffee Roasters Cafe, our Barista of the Month for May! Pim brings great energy to the café every morning, loves exploring new single origins, and is always up for a chat with the regulars.

What’s your name and where do you work?
My name is Pim and I work at @paradoxroasterscafe

What’s your favourite part of working at the café?
I love getting to try new single origins, especially because Paradox has so many options rotating every month. I also love having little chats with our regular customers early in the morning.

Do you have any tips for perfecting latte art?
When it comes to alternative milk, let it sit for a bit first — it makes it easier to pour a rosetta or a swan.

What’s your favourite Paradox blend or origin, and why?
I low key loved the ETH Yirgacheffe Tulisi on batch brew last month. I was never really a batch brew fan, but I couldn’t stop drinking it hahaha. I also love Picasso Baby as a small long black — smoothest blend ever!

How do you dial in the coffee each morning?
I run a couple of shots, look at the extraction time and yield, adjust the grind size, then taste it to get the balance right.

What do you look for when adjusting the grind?
I look at the extraction time, taste, and how the water flows through the grounds. If it’s running too quick or too slow, I’ll adjust the grinder until it matches the recipe I’m after.

Do you prefer filter or espresso at home, and why?
Definitely filter! I always have heaps of frozen beans in the freezer hahaha, and I love tasting the different flavour profiles and notes. Big fan of ETH all the way through.

What’s your go-to coffee order when you’re not working?
If I’m grabbing a coffee early in the morning, it’s a small long black to warm my tummy. But if the sun’s out, then definitely a small soy flat white.
