COLOMBIA RED BOURBON FINCA JUAN MARTIN

Finca Juan Martin is an experimental farm in the highlands of Sotará, southern Cauca, focused on cultivating, harvesting, and processing different varieties to develop optimum coffee quality.On the steep terrain soil conservation is prioritised, undergrowth is maintained to prevent erosion, crops are regularly evaluated, tree surfaces are cleaned and the spacing between rows is cleared every 2 months. Coffee cherries are picked ripe, depulped the same day, and fermented in open air tanks for 12-36 hours before being washed and dried.The Red Bourbon variety discovered in San Adolfo, stands out visually with orange stripes on fully mature red cherries. This expressive cup is prized for its exceptional sparkling fruit flavours of cherries, white peach, honeysuckle and tropical mango.

ETHIOPIA FW GR1 HALO BERTI YIRGACHEFFE

This outstanding coffee comes from the Gedeo zone within the Yirgacheffe region of southern Ethiopia, widely considered the birthplace of coffee. Sourced from the Wurae Washing Station that comprises over 700 smallholder farms, this coffee consists of Ethiopian Heirloom varietals. The ripe coffee cherries are handpicked, floated to remove underripe fruit, pulped, and fermented for 36-72 hours before washing and soaking in spring water. The parchment is dried first on skin tables and then on raised beds for 9-12 days. This GR1 coffee signifies the highest quality classification in Ethiopia, indicating zero defects and no cup faults upon inspection. A classic Yirgacheffe coffee, it has a delicate fruit profile of blueberries, lime, and black tea.

PAPUA NEW GUINEA BAROIDA ESTATE NATURAL

Historic Baroida Estate is in Papua New Guinea’s Eastern Highlands and is known for producing high quality coffee with delicious fruity and complex flavours. Owned by the Colbran family, Baroida Estate is named after a local spirit said to inhabit a large river rock. For this natural lot, coffee cherries undergo meticulous separation to ensure quality control. After careful sorting the cherries are laid on raised beds to sun dry. Carefully roasted to amplify its unique flavours, this coffee has beautiful notes of pineapple, rich caramel and cedar.
