LIMITED RELEASE

ETHIOPIA YIRGACHEFFE DANCHE VILLAGE

This exceptional lot is from Danche Village in the Gedeo Zone, just south of Yirgacheffe. This district is a hub for coffee-farming families renowned for their high-quality produce, cultivated from small plots of less than 2 hectares. Traditional cultivation methods dominate the region with coffee plants intercropped with other food crops. At the Chelbesa wet mill, cherries are meticulously selected, floated to remove low-density beans, pulped, and anaerobically fermented for 84–96 hours. After fermentation, the cherries are double washed and dried on shaded beds for 13–15 days to 11.5% moisture. The result is a vibrant and elegant cup, with notes of nectarine, mango and bergamot.

KENYA MURANGA AA KIRITI FARMERS CO-OP SOCIETY

The New Kiriti Farmers Cooperative Society unites 560 smallholder farmers and is known for producing high quality Kenyan coffee using methods that emphasise sustainability and quality control. Cherries are harvested at peak ripeness, pulped the same day and fermented in open-air concrete tanks for 24–48 hours. After fermentation the beans are thoroughly washed and soaked for 12–72 hours and spread on raised beds with regular turning to ensure even drying.

COSTA RICA IVANS SOLIS MICROMILL

The Los Santos area is known for producing some of the best coffee in the country. The small holder farms located at high elevations in this area contribute to the family-run Ivan Solís Micromill. This mill is dedicated to selecting the best fruit and processes to produce coffees with unique and differentiated profiles.
Using a natural process method, cherries are carefully handpicked at peak ripeness and sorted in a float tank where the highest-quality fruit sinks to the bottom.
After sorting, cherries are spread on raised drying beds and are rotated consistently over 30–40 days to ensure even drying, to preserve sugars, and to develop clarity, sweetness and balance. 
This coffee has a delicious profile of tangy orange, smooth cacao and sweet strawberry.
