Barista of the Month - Rene - Winey Cow Cafe - March 2025

Each month, we’ll highlight a Barista of the Month from our partners across the country, sharing insights into their routines, what they love about their work, and tips for home baristas. Meet Rene Spata from Winey Cow Café on Main Beach, who is April Barista of the Month!

What’s your name and where do you work?

My name is Rene Spata, and I'm working at Winey Cow Café on Main Beach.

How did you get started in coffee?

When I moved to Prague, I got a job as a café manager without any coffee experience before, so I guess it was destiny. 😃

What’s your favourite part of being a barista?

I love making latte art—as I say, it separates me from just being a “milk heater” 😁. I also like having a laugh with my co-baristas during our high peaks because I think positive energy is the most important thing in hospitality.

How do you keep improving your barista skills?

For latte art, it's important to have a good structure of milk. Always make sure to mix the milk with foam to have something to draw with at the end of your jug. Start with your cup at an angle, pour slowly, and as you do, slowly level your cup. Always be as close to the surface as possible. For new latte art techniques, check social media and train as much as possible using takeaway cups.

What’s your favourite coffee to make or drink?

My favourite coffee beans are Penny Lane. It has good acidity, and since I drink Flat Whites, it gives me a balanced and strong coffee taste.

What advice would you give to new baristas?

Keep learning and practicing your craft. Don’t be afraid to experiment and try new things.

What’s the best part about being a part of the Winey Cow team?

The best part is definitely the people. We have a great team, and everyone is passionate about what they do. It's like a family!
