Around 800 smallholder farmers contribute cherries to the Inoi Cooperative Society mill, growing coffee on small plots at around 1750 MASL. Bright red, nutrient-rich soils, cool temperatures and ideal rainfall provide the conditions for slow maturation and an expressive cup character. Cherries are handpicked at peak ripeness and carefully sorted before being traditionally fully washed.
