El Diviso is a family-owned farm managed by Jose Lasso and his three sons. Located in the high altitudes of Tolima, the farm specialises in cultivating unique coffee varieties using new experimental processing methods.

The honey process is ideal for Gesha, building on its clean flavours while enhancing its body and sweetness. A rapid roast with a light touch on the final development preserves the delicate fruit notes of this beautifully balanced yet complex cup.

Not all Gesha is created equal – the growing and processing is very important in producing a fine cup. El Diviso has done a spectacular job to create a lovely coffee.

This lot delivers vibrant tasting notes of papaya, cherry and pomegranate. The coffee has undergone an anaerobic natural process, with a 40 hour fermentation period in a low oxygen environment prior to final bed drying. This fermentation process is suited to the sugar-rich Caturra variety, enriching the sweet fruit notes of the coffee.

Macuba Washing Station in Rwanda’s Western Province receives coffee from over 450 small farmers. As a relatively small producing country, Rwanda aims high for quality, and stations like Macuba are run with great professionalism. This is evident in the clean, crisp flavours and wonderful structure of the coffee. We have applied a fast-paced roast profile with gentle development to preserve the delicate acidity and delicious flavours in the cup.
