Finca Las Flores
Finca Las Flores is operated by third-generation growers, brothers Carlos, Jhoan and Diego Vergara. With over 30 years experience, the Vergara family are dedicated to producing superior quality coffee using innovative production techniques. Ripe cherries are harvested and undergo 48 hours fermentation in plastic barrels, followed by thermal shock processing where the coffee is washed with water at 50°C. Relocated to plastic barrels for a second anaerobic fermentation phase, a yeast formula is sprayed onto the cherries and left for a further 80 hours. Once fermentation is complete, cherries are sundried for 15 days and rigorously quality checked. The result is a coffee with exceptional flavours of cherry, mango and lychee.
BURUNDI MUSENYI
Kawazamurabawe Cooperative
Burundi is one of the smallest countries in Africa that produces truly brilliant coffees. This coffee is grown by the Kawazamurabawe Cooperative which includes 232 skilled smallholder growers and is processed at the Musenyi washing station that was established in 2015. Using a single-fermentation process, cherries are soaked in tanks and are dried for 7 days, turning regularly to achieve even drying. Characteristics of this top Burundi coffee include delicate fruit flavours and lovely clarity. Experience a frangipane aroma with tasting notes of tangerine, apricot and an Earl Grey tea finish.

Natural Anaerobic
The Sipi Falls coffee project includes over 5,000 smallholder producers across more than 2,000 hectares, dedicated to sustainable coffee cultivation. Through this project, producers foster strong community relationships and receive education and training to improve sustainable agricultural practices. This includes cultivating coffee under shaded trees and implementing water recycling systems to increase yields and enhance coffee quality. Our Paradox Coffee Roasters team has a long-standing partnership sourcing coffee from Sipi Falls, and we proud to share this wonderful organic espresso roast with you.
