COLOMBIA SUDAN RUME
Jairo Arcila
This extraordinary Colombian Sudan Rume micro-lot delivers exceptional cup quality and a complex flavour profile. Grown by Jairo Arcila in Colombia at his Santa Monica Farm, this award winning and rare Ethiopian coffee is known for its large and long beans. The coffee cherries are carefully hand-picked with only the ripest selected, they then undergo dry aerobic fermentation for 24 hours and are transferred to GrainPro bags for 50 hours at temperatures below 22°C. This is followed by fermentation in an anaerobic environment for 40 hours, and sundried on raised beds until reaching the ideal moisture content. Slightly savoury and highly complex, this coffee shifts with temperature, revealing new layers with each degree of change. Expect vibrant tasting notes of guava, ruby grapefruit, aged rum, and hibiscus.
KENYA THIRIKU AA WASHED
Grown at the foothills of the Aberdares in Nyeri County, Kenya Thiriku AA comes from the Thiriku Farmers Cooperative Society, known for exceptional quality. The region’s rich volcanic soil and ideal climate shape the vibrant profile of this coffee. At Thiriku, only the ripest cherries pass strict quality checks and are processed separately for uniformity. Using a Penagos pulper, the coffee undergoes fermentation, grading, and is dried on raised tables for 10 to 16 days, enhancing its distinct flavours and preserving the terroir’s character. This coffee delivers tasting notes of sweet toffee and honey, layered with blackcurrant and bright orange. A juicy orange acidity and smooth, syrupy body lead to a lingering finish of toffee and fresh orange juice.

This coffee offers bright notes of blueberries, passionfruit, and honeysuckle, with a sweet, tropical finish that lingers on the palate. Juan is committed to his craft and takes great pride in the positive impact his farm has on the community. He believes that the passion and values cultivated on the farm should resonate through the entire journey, from seed to cup, leaving an indelible mark on all who encounter it.
