The Democratic Republic of Congo (DRC) was once known as the “paradise of coffee” before the effects of political and economic instability. Today the DRC has a new reputation as a producer of high-quality specialty coffee, having made great improvements in quality control and knowledge of specialty coffee production.

Through our relationship with Sucafina in Africa, we imported this fully washed small lot, grown at a high altitude in nutrient-rich volcanic soil in the South Kivu region. Impressive in its clarity, elegance, and flavour, with notes of citrus, chocolate and blackberry, we are proud to showcase this rare offering from a nation who are working hard to be among the greats of African coffee.

Producer Andres Trujillo is relentless in pursuing cup quality. He is constantly looking for efficiencies on his farm to achieve a balance between productivity, quality and environmental stewardship.
In contrast with most farmers Andres has chosen to produce all of his coffee using the natural method. The rich, sweet flavours in this coffee are developed from natural sugars during the tank fermentation process before the beans are dried. We have used a light roast to highlight the delicious plum, watermelon and pineapple notes of this Colombian Natural, that is best enjoyed as a filter brew.

We are excited to feature another remarkable coffee in our Paradox limited release collection, from producer Rodrigo Sanchez in Hulia, Colombia.

Known for his experimental and varietal specific processing methods, Rodrigo has used an anaerobic fermentation process, inoculating Purple Caturra with a prepared citrus ‘wine’. The result is a harmonious flavour profile with notes of ruby grapefruit, tangerine and vanilla. This lot is rare and extremely small due to the difficulty and complexity of the processing method used. We have roasted this special coffee with great care for a wonderful filter brew experience.
